Classic Egg Salad

6 hard boiled eggs, peeled & diced
2 tsp. Dijon mustard
¼ c. mayonnaise
2 tsp. lemon juice
2 Tbsp. minced red onion
¼ tsp. slat
½ med. celery stalk (celery seed)
ground black pepper
dill or parsley

Mix all ingredients together in medium bowl. Serve as sandwich or salad.
